Fresh, fruity & warming at the same time: This creamy celeriac and apple zero soup combines the delicate taste of celeriac with the subtle acidity of our de-alcoholized apple wine Apfel-Zero. Ideal as a light starter or warming main course - vegan, balanced and full of flavor.

Ingredients (for 4 hungry people):
- 1 small onion (preferably white)
- 1 sweet apple (e.g. Gala)
- 300 g celery, peeled
- 2 tbsp sunflower oil or vegan butter*
- 300 ml vegetable stock
- 300 ml vegan cooking cream* (preferably soy, e.g. Rama Cremefine)
- 300 ml Apple Zero from Schobers Naturprodukte
- Cayenne pepper
- Salt*
And this is how it works:

Chop the onion. Quarter the apple and put a quarter to one side for the garnish. Core the rest of the apple (peel if necessary) and roughly dice with the celery. Sauté everything in oil or vegan butter. Then deglaze with the vegetable stock, cover and simmer for approx. 20 - 25 minutes.

Cut the remaining apple quarter lengthwise into not too thin slices (approx. 2 mm). Remove 1 tbsp of celery from the soup and dice into small cubes. Puree the soup with a hand blender. Add the vegan cooking cream and simmer for a further 5 minutes, adding the de-alcoholized apple cider „Apfel-Zero“ after about 2 minutes*. Meanwhile, fry the apple slices and celery cubes in the pan until golden brown.

Finally, serve the soup, garnish with the celery cubes and apple slices and sprinkle with a little cayenne pepper. Optionally, herb bread croutons or parsley can also be added.
Your refreshing vegan soup is ready!

*Good to know:
- Leave the salt off for the time being during cooking.
- Season the soup to taste once the apple zero has been added and then add salt as required.
- The apple zero adds the perfect finishing touch to the soup with its freshness, so there is usually no need for salt.
It is important to add the „apple zero“ at the end, as the flavors evaporate due to the high heat.
The vegan butter and cooking cream can also be replaced with dairy products.
